SITXFSA005 Use Hygienic Practices for Food Safety
You will learn the essential skills and knowledge to use personal hygiene practices to prevent contamination of food in the workplace.
Topics include:

This training program is commonly referred to as “Safe Food Handling” and is suitable for people who work in / are applying for work in food service roles. This can include fast food outlets, restaurants, catering/functions or cafeterias.

Classes are run over 1 day.
The training includes theory knowledge in the classroom, as well as an overview of practical skills in a operational kitchen environment. Quality Service Skills coordinate access to the practical component of the training.
The assessment includes a written test at the completion of the theory training; as well as a demonstration of the learner’s personal and kitchen hygiene skills during the practical component of the training.
There are no pre-requisite requirements to undertake this training program.
VICTORIA:
Jackie has over 20 years experience in the food service industry, commencing at Hungry Jack’s in 1987. Over time Jackie has been employed as a functions waitress at The Ballarat Lodge (now Mercure Ballarat), preparing and serving food and baked products at The Bow Bakery, and many years experience as a food and beverage waitress at well-known establishments in South Australia including Jimmy Watson’s Restaurant, Adelaide Festival Theatre ‘Lyrics’ Restaurant, Customs House Seafood Restaurant in Port Adelaide and Styles French Restaurant. Jackie holds a Diploma of Hospitality Management from the well-respected Regency Park Hotel School.
Mario is a qualified Chef with many years experience in the hospitality industry; he has owned and operated his own restaurants including the well-known Letizia’s Cafe Bar Restaurant in Shepparton for 13 years. Mario holds a Certificate III and IV in Commercial Cookery, a Diploma of Hospitality Management and a Diploma of Food Appreciation. Mario has trained apprentice chefs and is currently the owner of ‘Cooking 4 Life’, an NDIS Provider that delivers practical-based Life Skills Cooking Programs.
TASMANIA:
Tim is a qualified Chef with over 25 years experience in the food industry. Tim is currently employed casually as a Chef in Hobart which allows him to continually update his skills and knowledge. Tim has experience as a Chef and Head Chef at some of Hobart’s (and Victoria’s) most well known restaurants.
Tim has a Certificate IV in Commercial Cookery, as well as his Trade Certificate in Cookery from the highly respected William Angliss TAFE in Melbourne.
Tim’s experience and knowledge ensures this training program is relevant, engaging, practical and a fun environment to learn in.

Responsible Service of Alcohol
SITHFAB021 Provide Responsible Service of Alcohol (RSA)
RSA training is mandatory for for licensees and staff who sell, offer or serve liquor in Victoria. In this course you will learn the skills and knowledge to:
- Sell or serve alcohol responsibly
- Assist customers to drink within limits
- Assess alcohol-affected customers
- Identify when service must be refused
This training program is commonly referred to as “RSA” and is suitable for people who work in / are applying for work in alcohol sale or service roles. This can include bars, clubs, restaurants, functions or packaged liquor sales.
This course is approved by Liquor Control Victoria (formerly VGCCC). Quality Service Skills is registered with the LCV to deliver this course which can be viewed here.

- Do I need to update my RSA?
Classes are run over a minimum of 6 hours. This can include weekends, weeknights or weekdays.
The training includes theory knowledge in the classroom. Courses can be run on-site at places of employment.
The assessment includes a written assessment at the completion of the theory training (provided by Quality Service Skills and approved by LCV). It is a closed-book task and learners must answer all questions correctly. Learners are also required to participate in role-play scenarios during class time.
There are no pre-requisite requirements to undertake this training program.
VICTORIA:
All trainers delivering RSA in Victoria are approved by Liquor Control Victoria to do so.

Upon successful completion of this training program, Quality Service Skills will issue you with an RSA Certificate on behalf of Liquor Control Victoria. You will also receive a Statement of Attainment from Quality Service Skills.
It is a requirement to ‘refresh’ your RSA training online every 3 years. This is completed at www.vcglr.vic.gov.au and there is no charge. You will need to enter your RSA Certificate Number so it is important you keep a copy of your original RSA Certificate for future reference.
As all LCV Certificates are now digital, there is no charge to re-issue lost or misplaced RSA Certificates.
Note: if you completed your training, check your emails / junk emails for the certificate before contacting QSS. QSS sends the certificates out within 30 days of training completion; and generally within a week.
Prepare and Serve Espresso Coffee
SITHFAB025 Prepare and Serve Espresso Coffee
This two-day training program (often referred to as the Barista Course) covers the essential knowledge and skills required to prepare and serve espresso coffee products. It is perfect for anyone who wishes to learn about:
- Organising the coffee workstation
- Selecting and grinding beans
- Taking orders for espresso coffee products
- Extracting and monitoring the quality of espresso
- Milk texturizing
- Coffee “Art”
- Serving coffee beverages
- Cleaning espresso equipment
The first day of the course is theory. The second day is practical skills, and all students are required to prepare and make lattes, cappuccino, espresso (short black), flat white, long black, piccolo latte, mocha, ristretto and short & long macchiato. Class sizes are limited to 6-8 students maximum to ensure everyone has ample opportunity to undertake practical skills. Students will serve coffees to any staff or members of the public in attendance at the training course, for FREE. We do not charge for the coffees made as this is a training experience.
Quality Service Skills have a mobile espresso coffee unit that includes a commercial size espresso machine, grinder and fridge unit. We can deliver training on-site anywhere in Victoria; however, access to running water and bathrooms is compulsory.
Note: It is a requirement of this Unit of Competency that participants already hold their Food Handlers Certificate. This can be the unit SITXFSA005 Use Hygienic Practices for Food Safety (or equivalent). Evidence of completion must be provided before commencement in the training. If Food Handlers has been completed with QSS, we can confirm this for the student.

The training includes theory and practical skills.
The assessment includes a written assessment during day one, which is a closed-book assessment. There is also an observation of practical skills on day one and two.
It is a requirement of this Unit of Competency that participants already hold their Food Handlers Certificate. This can be the unit SITXFSA001 Use Hygienic Practices for Food Safety (or equivalent). Evidence of completion must be provided before commencement in the training. If Food Handlers has been completed with QSS, we can confirm this for the student.
Mario has more than 20 years experience in the hospitality industry, owning & operating Letizia’s Cafe Bar Restaurant in Shepparton; including ‘The ATTICK’ – a well-known cocktail bar with live jazz and blues music; a well as a venue for hosting functions. Mario has a Diploma of Hospitality Management and has made more coffees than anyone I know!
